Healthy Recipes for Your Next Sports Party
Now that most sports are back in full swing, Teatulia Organic Teas is here to help you plan your next big party with some delicious, healthy recipes that will make a hometown victory taste that much better.
The recipes featured below are from “Out Cooking It – Recipes from Cancer Survivors & Supporters”, a collection full of yummy, healthy, and easy to make recipes submitted by cancer survivors. Our long time friends at First Descents, a non-profit organization dedicated to helping young adults battle cancer, put the collection of recipes together. We have contributed to a number of their works and even offered up our Tea Bar for the photo-shoot of all these delicious recipes!
The proceeds from the book will go to helping young adults who are battling cancer cope through various recreational and outdoor activities. To learn more about First Descents and their cause, visit their website at: https://firstdescents.org/.
Honeydew and Avocado Salsa
Recipe by Jenn Warden, First Descents camp chef
Lime zest, finely grated
2 tbsp fresh lime juice
1 tbsp olive oil
1 ½ lbs honeydew melon, in ¼ inch dices
1 haas avocado
1 tbsp mint
Salt and freshly ground black pepper
1. In a bowl, combine the lime zest and juice with the 1 tablespoon of olive oil.
2. Using a rubber spatula, gently fold the diced honeydew melon, avocado and mint.
3. Season the salsa with salt and black pepper.
Earl Grey Cookies
Recipe by Teatulia Organic Teas
Mortar and pestle
Parchment paper or foil
18 gm Teatulia Earl Grey Tea (9 whole leaf tea bags)
2 cups all-purpose flour
½ cup granulated sugar
½ cup confectioners’ sugar
½ tsp salt
1 tsp vanilla
1 tsp water
1 cup unsalted butter, softened and cut into pieces
1. Grind the tea from the tea bags into a fine powder (using a mortar and pestle works best).
2.Pulse together all dry ingredients in a food processor.
3. Then add the vanilla, water and butter. Pulse together until the dough is formed. Divide the dough in half. Place each half on a sheet of plastic wrap and roll into a 12 inch log, about 2 inches in diameter. Chill both wrapped logs for 30 minutes.
4. Preheat oven to 375°F. Unwrap dough logs (one at a time to keep cold and hard) and slice into disks about 1/3-inch thick. Place cookies on parchment or foil lined baking sheet about an inch apart. Bake until edges are brown (10-12 minutes). Let cool for a moment and then transfer to wire racks. Enjoy!
