White tea is a relative newcomer to the international scene.

Until recently, White Tea was virtually unknown outside of China where it was first produced during the Tang Dynasty (618-907 A.D) and later highly revered during China's Song Dynasty (960-1279). It was the choice of the royal court and was given as tribute to the emperor. White tea leaves and buds were ground into a silvery powder, which was then whisked in bowls. This was the inspiration for the famous Japanese Tea Ceremony. Another early production method of white tea involved compressing the leaves into cakes and boiling in kettles. As ruling dynasties changed, so did the production of white teas.

The process by which today's White teas are made can be traced to the late 1700s when loose teas from a mixed-variety tea bush were steeped for tea production. By 1885, specific types of tea bushes were being used to create various types of White teas. In 1891, Chinese exportation of White teas began.

White teas come from immature leaves of the Camelia sinensis plant. The young leaves still have fine, white, silvery fuzz on them (hence the name) and produce some of the rarest, and most costly teas. After plucking, the leaves are gently processed, producing a delicate tea requiring delicate preparation. White teas should never be steeped with boiling water as this will burn & damage the leaves. Water just off the boiling point should be used. And the steep time for White Tea is relatively short to keep it from becoming bitter - 2 minutes max. The taste of white tea ranges in intensity levels but most are quite delicate - an unexpected flavor for the American palate, but one that is growing in appeal.

STEEPSTER REVIEW: Teatulia White Tea "A really nice, soft treat. The liquor is very light, a little yellowish and clear. It has a fairly floral nose and some vegetal notes... It's surprisingly sweet throughout the whole sip. You get a good amount of sweetness when it first hits your tongue, then it recedes a little, but comes back the strongest farther back in your mouth. It finishes nice and sweet with an almost buttery flavor... A good white tea with some flavor complexity and unusual notes that make it stand out from other plain whites."

White Tea extract induces lipolytic activity and inhibits adipogenesis in human subcutaneous (pre)-adipocytes. Nutr Metab. May 2009. Sohle J, Knott A, Holtzmann U, Siegner R, et al.

BACKGROUND: The dramatic increase in obesity-related diseases emphasizes the need to elucidate the cellular and molecular mechanisms underlying fat metabolism. To investigate how natural substances influence lipolysis and adipogenesis, we determined the effects of White Tea extract on cultured human subcutaneous preadipocytes and adipocytes.

METHODS: For our in vitro studies we used a White Tea extract solution that contained polyphenols and methylxanthines. Utilizing cultured human preadipocytes we investigated White Tea extract solution-induced inhibition of triglyceride incorporation during adipogenesis and possible effects on cell viability. In vitro studies on human adipocytes were performed aiming to elucidate the efficacy of White Tea extract solution to stimulate lipolytic activity. To characterize White Tea extract solution-mediated effects on a molecular level, we analyzed gene expression of essential adipogenesis-related transcription factors by qRT-PCR and determined the expression of the transcription factor ADD1/SREBP-1c on the protein level utilizing immunofluorescence analysis.

RESULTS: Our data show that incubation of preadipocytes with White Tea extract solution significantly decreased triglyceride incorporation during adipogenesis in a dose-dependent manner (n = 10) without affecting cell viability (n = 10). These effects were, at least in part, mediated by EGCG (n = 10, 50 muM). In addition, White Tea extract solution also stimulated lipolytic activity in adipocytes (n = 7). Differentiating preadipocytes cultivated in the presence of 0.5% White Tea extract solution showed a decrease in PPARgamma, ADD1/SREBP-1c, C/EBPalpha and C/EBPdelta mRNA levels. Moreover, the expression of the transcription factor ADD1/SREBP-1c was not only decreased on the mRNA but also on the protein level.

CONCLUSION: White Tea extract is a natural source that effectively inhibits adipogenesis and stimulates lipolysis-activity. Therefore, it can be utilized to modulate different levels of the adipocyte life cycle.
