White Tea Smash

What exactly is a “smash”? Generally, a smash refers to a family of cocktails that involve muddling an herb with a sweetener and topping it with booze and sparkling water—think, Mint Julep. What exactly is “white” tea? White tea is harvested before the tea plant’s leaves open fully, when the young buds are still covered by fine white hairs, hence the name “white” tea. White tea is typically more delicate and fresh tasting than a green or black tea. This refreshing White Tea Smash was submitted to Teatulia by a talented mixologist from Colt & Gray, the sleek yet rustic Denver-based eatery with amazing food and even more amazing cocktails. Makes 1 cocktail

Ingredients:

  • 1 pyramid tea bag Teatulia White Tea
  • 4 oz. water, just boiled
  • 2 sprigs fresh thyme
  • 1/4 wedge of lemon, cut in half
  • 1/4 oz. honey
  • 1 1/2 oz. vodka
  • Ice cubes
  • Soda water

Preparation:

Steep the tea bag in the just boiled water for 3 minutes. Discard tea bag and let tea cool to room temperature. Once tea has cooled, place 1 sprig of thyme, half of the lemon quarter, and the honey in a tall collins glass and muddle (or smash) them together with the handle of a wooden spoon or a cocktail stirrer. Stir in the cooled tea and vodka. Fill the glass with ice cubes and top with soda water. Give the cocktail one more stir and garnish with remaining half of the lemon quarter and a thyme sprig.
