Matcha Bees Knees Cocktail Recipe
Mouthwatering lemon, grassy-sweet green tea, juniper-spiked gin, and floral honey combine for a refreshing summer cocktail that has layers upon layers of flavor. It’s easy to whip up, too. Be sure and follow the tip to make a paste with the matcha green tea powder before whisking in all of the water. This helps the matcha incorporate completely into the cocktail so that it’s frothy and smooth.

Makes 1 cocktail
- 1/2 tsp. matcha green tea powder
- 1/3 cup boiled water that’s had a couple of minutes to cool
- 2 tsp. honey
- 2 oz. gin
- Lemon wedges
- Sparkling water
In a medium bowl, whisk matcha powder with a splash of the hot water to form a smooth paste; this will help the matcha incorporate completely into the cocktail with no clumping. Whisk in remaining hot water and honey until honey is dissolved. Let cool. Pour over a glass full of ice, add gin, squeeze in a lemon wedge or two, and top with sparkling water. Give it a quick stir before serving.
