The Fifth Element

The star of this classy cocktail is a chamomile-infused syrup with a hint of fresh sage. The subtle flavors of sweet, floral chamomile and warm, fragrant sage are the perfect match for the herbal notes in a gin-based martini. Makes 2 cocktails

Ingredients:

For chamomile sage syrup:

For cocktails:

  • 2 oz. Spirit Hound Gin
  • 2 oz. Dolin Blanc Vermouth
  • 1 oz. chamomile sage syrup
  • 1 oz. lemon juice
  • Fresh sage leaves for garnish

Preparation:

For chamomile sage syrup: Bring water and sugar to a boil in a small saucepan, stirring to dissolve sugar. Let syrup cool to room temperature. Add chamomile and sage, cover, and let steep overnight. Strain syrup into a re-sealable container and discard chamomile and sage. Refrigerate syrup and use within one month. Use to sweeten cocktails or iced tea. (Makes about 1 cup.)

For cocktails: Combine all ingredients except sage leaves in a cocktail shaker with a handful of ice. Shake well and strain into two martini glasses. Float a fresh sage leaf on each drink for garnish.
